Job Purpose:

Food Quality Inspector will control and ensures the quality and safety of food and meals.

Key Accountabilities:

• Control the Food and Beverage in terms of wastage, pilferage, and efficiency.

• Prepare variance analysis for food & beverage and communicating with relevant parties.

• Responsible for preparing daily Food and Beverage Report and distribute to management.

• Check and ensure that no material is issued out from the store without requisition or approval from the respective department head.

• Calculate figures for food inventories, orders, and costs. Maintain clear and organized records to ensure all reports and invoices are filed and stored properly.

• Conduct inventory audits to determine inventory levels and needs. Complete requisition forms for inventory and supplies.

• Adhere to food safety and handling policies and procedures across all food-related areas.

• In conjunction with the Provision Master, provides analysis of F&B stores consumption to handle the ordering of Food and Beverage as exact as possible.

• Prepare variance analysis for food & beverage and communicating / discussing with relevant parties.

• Conduct spot check to ensure that the goods received are as per specifications and the deliveries of goods by suppliers are consistent with the receiving schedule and the storerooms are not overstock.

• Perform inventory audits, make sure that food is not being wasted and have enough products to meet needs of menus.

• Coordinate Food Safety, Quality and Regulatory Management Systems. Plan, coordinate, and direct all quality, sanitation, regulatory and food safety programs within the establishment to ensure compliance with company, governmental and customer requirements and expectations.

• Understand the size portion and quality of food ingredients to be used

• Understand storage requirements

• Understand preparation and cooking requirements

• Observe the Catering Service Provider (CSP) staff during their work ensuring they have clean workwear, hair netting etc. and are frequently hand washing

• Inspect food storage ensuring proper storage and taking temperature readings and there is no date expired stock

• Verify the CSP is taking frequent readings and stock rotating

• Inspect food preparation areas and ensure proper preparation with no cross contamination

• Inspect cooking facilities and ensure times and temperatures are adhered to

• Inspect the quality of ready to serve food

• Inspect food service counters and displays

• Observe meal service and ensure proper portions are served

• Inspect the crockery for cleanliness

• Inspect the dining area for cleanliness

• Observe compliance of diners with designated areas

• Observe plate and tray return areas to ensure these are removed as they build up

• Ensure the CSP thoroughly cleans all areas between meals

• Ensure the washing facility is being properly utilized and the quality

• Report any anomalies to the CSP manager or supervisors

• Stop any unsafe or unhygienic practices and report to the Catering Manager

Qualifications & Experience:
  • Education

Bachelor’s degree in Hotel Management or equivalent.

  • Experience

Requires minimum of 3 to 9 years industry related experience or in a hospitality environment.

  • Languages

Excellent communication skills in English language (oral and written)
